Moisture resistant dusting ingredient for cake decorating. Essential for a beautiful matte finish on long shelf life pastries, desserts and dairy products. Lasts throughout their shelf life, remaining powdery and tasty at all times.

Gluten-free microencapsulated cocoa powder for cake decorating and industrial dusting of room temperature, refrigerated or frozen foods.
This special cocoa powder resists moisture and remains in powder form for up to 12 months after being dusted on the surface of industrial confectionery products. Created through sophisticated microencapsulation technology, DOLCESOFT CACAO® is the main ingredient in industrial tiramisu.

What?

Cocoa powder preparation based on micro-encapsulation technology of non-hydrogenated vegetable fats and palm free fats, that makes it moisture resistant.

Dolcesoft Cacao® is the industrial ingredient for cake decorating, topping and sprinkling of industrial pastry and desserts.

Its appearance is a brown-colored flowing powder with a tasty cocoa flavor.

Where?

  • On frozen products that require a cocoa decoration that clings very well and does not dirty the package during handling; on frozen or deep-frozen products that may suffer a temporary interruption in the cold chain.
  • On out-of-refrigerated products at room temperature, with a long shelf life and which need to retain their original dusty appearance when the pack is opened.
Industrial use

This product is expressly indicated for dusting through industrial plants; thanks to its smoothness and fluidity it can be easily applied to industrial products in line.

It is an ingredient for dusting and decorating industrial confectionery because it has been specially formulated for long-life products.

Industrial food products, which have to ensure optimal preservation during their shelf life, can be subjected to considerable stress during storage, transport and display on the shelf or in the fridge.

The aim of this technological ingredient is to preserve their appearance and taste for a long time according to industry parameters.

Microencapsulation is carried out in our calibrated industrial equipment to encapsulate each individual grain of cocoa powder in an impermeable grease barrier. The fludity parameter is guaranteed for ideal flow for in-line sprinkling of industrial products.
